Recipe in English:

Ingredients:
Prepare Dough:
-Safed atta (Fine white flour) sifted 2.5 Cups
-Namak (Salt) 1 tsp
-Cooking oil 2 tbs
-Water 1 Cup or as required
-Cooking oil ½ tsp
Prepare Potato Filling:
-Aalo (Potatoes) boiled & cubes ½ kg
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Kalonji (Nigella seeds) ½ tsp
-Dhania powder (Coriander seeds) 1 tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Chaat masala ½ tbs
-Hari mirch (Green chilli) chopped 1 tbs
-Hara dhania (Fresh coriander) chopped ½ Cup
-Pyaz (Onion) chopped 1 medium
-Cooking oil

Directions:
Prepare Dough:
-In a bowl,add fine white flour,salt & mix well.
-Add cooking oil & mix well until crumbled.
-Gradually add water and knead until medium soft dough is formed.
-Grease with cooking oil,cover & let it rest for 15-20 minutes.
Prepare Potato Filling:
-In a bowl,add potatoes & mash well with the help of masher.
-Add salt,red chilli powder,nigella seeds,coriander powder,cumin seeds,chaat masala,green chilli,fresh coriander & onion,mix well & set aside.
-Take a small dough (65g each dough ball) and make a ball,sprinkle dry flour,roll out with the help of rolling pin & set aside.
-Take another dough,make a ball & roll out with the help of rolling pin.
-On rolled dough,add & spread potato filling (2-3 tbs) with the help of spatula,cover with reserved rolled dough,press & roll gently with the help of rolling pin (makes 7).
-Heat griddle,place rolled paratha and cook for a minute then flip it.
-Apply cooking oil & cook from both sides until golden brown.
-Now separate both layers of paratha and roll it with the help of tong.
-Serve paper paratha with yogurt & chutney.

-Bowl mein safed atta aur namak dal ker ache tarhan mix karein.
-Cooking oil da ker crumbled hunay tak ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker medium soft dough tayyar ker lein.
-Cooking oil sa grease karein aur dhak ker 15-20 minutes kliya rakh dein.
Prepare Potato Filling:
-Bowl mein aalo dal ker masher ki madad sa ache tarhan mash ker lein.
-Namak,lal mirch powder,kalonji,dhania powder,zeera,chaat masala,hari mirch,hara dhania aur pyaz dal ker ache tarhan mix ker lein & side per rakh dein.
-Chota dough lein (65g each dough ball) aur ball bana lein,atta chirak dein aur rolling pin ki madad sa bail lein & side per rakh dein.
-Ek aur dough la ker ball bana lein aur rolling pin ki madad sa bail lein.
-Rolled dough per aalo filling (2-3 tbs) dal ker spatula ki madad sa pheela lein aur reserved dough rakh ker press ker lein aur rolling pin ki madad sa gently press ker lein (makes 7).
-Tawa garam karein aur rolled paratha rakh ker ek minute kliya paka lein phir flip ker lein.
-Cooking oil laga lein aur dono sides sa golden brown hunay tak paka lein.
-Ab paratha kid ono layers ko alag ker lein aur tong ki madad sa roll ker lein.
-Paper paratha ko dahi & chutney ka saath serve karein!
